Our hosts wineries will be featuring a viewing of their Art Gallery with a glass of Brutt. Tutorial wine tasting which includes five of their premier wines, a 2-course winemakers luncheon followed by a tour of their cellars.

Sally James  

Sally James is an award-winning Australian chef, author, educator, television presenter and an ambassador for Australian food & wine whose books and recipes have won international acclaim for food & wine pairing, health and creativity. Sally is the author of eighteen books, including her best-selling Simply Healthy—winner of the prestigious World Cookbook Awards, Versailles, France, 1999 for Best Health Cookbook, Fresh and Healthy–Winner of the 2001 IACP International Cookbook Award in the Health category, Simply Sensational, a finalist for the IACP Award in 2003, and the Australian Heart Foundation Cookbook.

We’ll Begin with a 3-day Margaret River winery tour featuring Palmers Winery and Leeuwin Wine Estates, located in the world- renowned Margaret River Region of Australia. From there we board our lovely ship the Crystal Symphony in Perth cruising to Sydney. The pristine natural landscapes lining Australia’s remotely beautiful southern coasts to the sophistication of Sydney, see the Twelve Apostles stone monoliths in Melbourne, kangaroos on the beach in Esperance and the charismatic charms of Tasmania.

February 2- Perth Australia

Upon arrival in Perth we have arranged private transportation from the airport to the Pan Pacific Perth. The Pan Pacific is an elegant 5-star property located in the city center of Perth. Dinner on own this evening.
 

February 3- Margaret River

After breakfast with our intimate group we will depart for Palmers Vineyards & Winery in Margaret River. Our tour included a tour of the ageing cellars, Palmers premier wine tasting, and finishing with a 3-course winemakers lunch. Accommodations provided by the 5-star Pullman Bunker Bay Resort. Dinner on own this evening.
 

February 4- Margaret River

After breakfast with our group we will continue on our Margaret River winery tour with a day at Leeuwin Vineyard & Winery. Starting with a tour of the art gallery, we will tour the wine cellars, enjoy a premier wine tasting and a 2-course winemakers lunch. After our lunch we will visit Mammoth caves, one of the few southwest caves with fossils. Accommodations provided by the 5-star Pullman Bunker Bay Resort. Dinner on own this evening.
 

February 5- Perth

After breakfast as a group we will continue to Perth to board our ship, the Crystal Symphony for our all-inclusive cruise to Sydney. Overnight on Crystal Symphony in Perth.
 

February 6 – Fremantle

Fremantle has welcomed seafarers from around the world for over 150 years. This distinguished port city lies at the mouth of the Swan River and is Western Australia’s leading harbor. During the America’s Cup Yacht Race of 1986/87, it underwent a dramatic facelift and was transformed into a restored and revitalized mecca of cafés, restaurants, bars and beautiful Federation-style buildings.
 

February 7- Bunbury

Shaped ages ago by lava flows, the basalt-rock land of Bunbury now encompasses one of Western Australia’s liveliest and fastest growing commercial hubs. Perhaps it’s the peninsula’s natural setting surrounded by the Indian Ocean, Koombana Bay and Leschenault Inlet, or maybe it’s the city’s proximity to Perth and even closer proximity to Australia’s abundant wildlife that have made Bunbury so exciting.
 

February 8- Albany

Albany’s colorful story is on display in the fifty or so colonial buildings that today serve as museums, galleries and restaurants. Whale World invites visitors to explore the only museum of its kind housed in a formerly fully operational whaling station. And let’s not forget what Australia is perhaps best known for: scenery.
 

February 9- Esperance

Every day is a “g’day” in Esperance, Australia, a terrifically beautiful place with abundant sunshine, brilliant white beaches, turquoise waters and, as you might imagine, outdoor activities galore. Even away from officially designated conservation areas, animals can be seen and even touched: the western grey kangaroo is often spotted on the beach at Lucky Bay and often are amenable to being approached by humans. Consider your time here and choose from truly unique sights, ranging from the honestly pink waters of Pink Lake to the granite outcroppings of Cape Le Grand National Park to the 105 islands of the Recherche Archipelago, home to fur seals, sea birds and penguins.

February 12- Melbourne, (overnight)

Melbourne is the capital city of Victoria. It maintains an air of old-world grace and refined dignity with spacious tree-lined boulevards and expansive parks. The prosperous lifestyle of its people is both cosmopolitan and sophisticated. Quaint trams rumble through the downtown area past verdant gardens and impressive high-rises, in a city that has never lost its endearing charm. The heritage of more than 100 different cultures has contributed to Melbourne’s richly international character. This diverse ethnic mix is exemplified by its range of 15,000 dining venues which offer more than 50 different kinds of cuisine. Melbourne’s sightseeing is as diverse as it is composition and beckons for your discovery.
 

February 14- Burnie

If Tasmania evokes images of a wild and untouched locale full of exotic animal and plant life, you are not far off. Tasmania indeed hosts a largely unspoiled natural environment, with almost 45% of its land protected in reserves, national parks and World Heritage Sites. As interesting as its animal inhabitants (platypus and fairy penguins, for instance) is Tasmania’s human-occupied city of Burnie, a town with an industrial past. Enjoy a taste of the locals’ endeavors with a sampling of fine cheeses and single-malt whiskey. Also take time to experience Creative Paper, Australia’s largest hand-made paper mill, where you can enjoy guided tours, see art exhibitions, shop the retail showroom and watch artisans at work.
 

February 15- Hobart, Tasmania, Australia

Hobart, premier city of the island-state of Tasmania, is situated between Mount Wellington and the Derwent River. As Australia’s second-oldest capital, it savors the present while revering its past. History adds picturesque charm to this charismatic city, for there are no less than 90 buildings with National Trust classification. At Salamanca Place and Battery Point, relics of the whaling days of the last century can still be seen. Tasmania maintains abiding links with a wealth of Australian heritage. The convict settlement of Port Arthur provides vivid reminders of bygone days. With a busy port and thriving commercial center, Hobart is justifiably recognized as one of the world’s most beautiful harbor cities.

The billowing profile of the Opera House greets us on her return to Sydney’s glorious, world-class harbor. Ahead lies the arch of the Harbour Bridge. These twin symbols, more than any other, identify one of the Southern Hemisphere’s premier cities.

Sydney is an energetic and exciting metropolis whose nightlife, shopping and fine restaurants compare favorably with the finest the world has to offer. Despite its modern advances, Sydney has lovingly cherished its heritage, for this was the birthplace of the Australian nation.

Combine Sydney’s boundless attractions with its superb harborside location, and you have that certain magic that few other cities can rival.

 

Palmer Vineyards & Winery

Established in 1977, the Palmer Winery & Restaurant is one of the pioneer vineyards of Margaret River. From humble beginnings to being the proud owners of over 50 national and international wine awards Palmer Winery has come a long way.

Winemaker Mark Warren, presides over the vineyards selection, which prominently features chardonnay, Semilon Sauvignon Blanc, Kracker Jack cabernet shiraz, shiraz and merlot (both gold winners).

But wine alone, isn’t palmers only claim to fame. Their Tuscan-style restaurant, which is designed also for alfresco dining, is one of the most eye-catching eating establishments in the Margaret River wine region.

Master Chef, Coby Cockburn selects only the best, produce to bring to life his carefully designed, exquisite menu. Sourced from produce grown or caught in the South West as well as from West Australia’s finest suppliers.

Leeuwin Winery & Estates

Family owned, Leeuwin Estate, one of the five founding wineries of the now famous Margaret River district of Western Australia, is under the direction of two generations who work with a team of highly skilled winemakers to consistently produce wines ranking alongside the world’s finest.
In 1972, legendary Napa Valley winemaker, Robert Mondavi, identified the future site of the Leeuwin vineyard as being ideal for the production of premium wine and provided early mentorship to Denis and Tricia Horgan in the transformation of their cattle farm into Leeuwin Estate.
Enjoying its first commercial vintage in 1979, Leeuwin was thrust into the international spotlight when Decanter Magazine gave its highest recommendation to the 1980 “Art Series” Chardonnay. The international accolades have continued and Leeuwin now exports to 30 markets.

Capping off our stay we will visit and tour Mammoth Caves

Your Margaret River Region is as spectacular underneath the ground as it is on top. Over 150 highly decorated limestone caves lay beneath the surface of the Leeuwin Naturaliste Ridge.
Formed approximately 1 million years ago, a number of these complex and fragile karst systems are open to the public. Go inside and be amazed by these massive labyrinths decorated intricately with limestone crystal formations.
You are free to wander at your own pace along the boardwalks and platforms, through the majestic chambers of the cave. Mammoth Cave is also one of just a few caves in the south west which contains fossils. A visit to Mammoth Cave finishes with a winding walk through the beautiful marri forest, with whistling birds and stunning flora displays. Mammoth Cave is much more than a cave – it is a complete nature experience.
